Before a project, Shantai was a journey
A first encounter with coffee in the mountains of Cusco that changed the way we understand not only the product, but also time, process, and everything behind each cup. From that experience this conversation was born. A journey through the moments, lessons and decisions that have shaped Shantai.
How did your relationship with Cusco and coffee begin?
It began as a trip to Peru. There, in the mountains of Cusco, we came into contact with coffee and with everything behind its cultivation.
What surprised you when you arrived in the Andes?
Respect for the land, the rhythm of nature and the way coffee is worked with. Each stage of the process requires time, care and attention.
What does Cusco bring to your coffee that you don't find elsewhere?
The altitude and environmental conditions directly affect the bean. This makes it possible to obtain a more balanced coffee, with less caffeine and a gentler acidity.
What did you learn from the coffee growers and communities?
That coffee is a way of life. Working with producers involves effort, collaboration and a direct relationship with the environment.
What did you feel was missing from speciality coffee?
A way of understanding coffee beyond the product. Not just from the origin or the technical side, but also from the experience.
How do you work on the relationship with producers?
We work directly with them, seeking fair and sustainable relationships over time.
How has this journey changed the way you see coffee?
